Vanilla and Roasted Creamy Coffee come through alongside undertones of Dark Chocolate before a Caramel like finish. This Rum Cihuatan Indigo comes directly from its inspirations from Maya culture, indigo blue is a color frequently found on frescoes of Mayan temples. Drawing inspiration from El Salvador’s Mayan heritage, who were insatiably curious, the distillery has married traditional rum crafting methods with an innovative forward thinking philosophy. This choice to highlight this culture comes from the fact that it is intimately linked to the country of origin of this rum: El Salvador.

The name “Indigo” was inspired by the colour blue, which was crafted by the ancient Maya using the Indigo flower (añil).The only distillery in the country, it has mastered the manufacturing of its rum which it produces from local raw materials which express all the richness and complexity of the landscape. The speciality of this human and artisanal distillery, also resides in its self sufficiency since, in addition to the sugar and molasses it produces, it generates its own electricity from bagasse, the fibrous residue of sugar cane.

Further indulgent hazelnut cappuccino with smooth vanilla, dark chocolate, butterscotch and creamy dulce de leche. The rum is analysed for tannic content, acidity and esterification for quality control to ensure a premium rum. The identification of similar rums is based on the community's tasting notes and the key data of the rum. Legend has it that the Sleeping Woman, guardian goddess of the Cihuatán valley, would intercede on behalf of the people of Cihuatán so that Tlatloc would make the valley bloom.Mix 50ml Cihuatán Indigo Rum, 10ml lemon juice, and 25ml cranberry juice and top up with 70ml Prosecco. The beautiful indigo blue that adorns the bottle and gift box of this bottling is considered the sacred colour of this deity.
